Super Food for a Super Day

I am about to share with you my favorite dish on planet Earth.  This recipe was handed down to me from a good friend of mine, who is all about health and fitness.  I recommend eating this every morning, or at least until you get sick of it, which you won’t!

  1. Go to your local health food store and find any kind of whole grain, dark bread that tickles your fancy
  2. Pick out a few ripe avocados, but not so many that they all go bad before you use them
  3. Grab a carton of large, brown eggs
  4. Don’t forget the fresh spinach!

Don’t give up on me yet, you won’t be disappointed!

First, cut up and smash your avocado.  You will be using it as a spread, so that should give you an idea of the consistency you are looking for.  Get some water boiling, as you will be boiling your egg.  Wait until it comes to a rolling boil and drop in an egg.  Then, toast your piece of delicious whole grain bread to your liking.  I personally don’t like it extremely toasted, but that’s just me.  I usually boil my egg for about two minutes, and then I throw in a handful of fresh spinach and cook it alongside the egg for two more minutes.  Now, I like my egg to have somewhat of a runny yolk as opposed to hard-boiled, but this is entirely up to you how cooked you would like it.  Also, the cooking time may need to be increased or decreased as per your elevation.

After your two minutes have passed, retrieve your eggs, spinach, and toast and spread your avocado all over it, as if it were butter.  Don’t be afraid to indulge, avocados are a super food after all!  I then drain my spinach and place it on top of the avocado spread.  Then I remove the shell from my boiled egg and break it in half.  It should be pliable enough to use your hands, unless it is hard-boiled.  Throw that egg on top of the spinach, and voila!  It’s a masterpiece of brilliant deliciousness, and it’s actually very good for you (you won’t be able to tell though with how fantastic it tastes).  It is also great to eat right after your morning workout, as it will give you nearly an entire day’s worth of energy.
